Ignasi grower, winemaker, local sales force and delivery driver for Vinyes Singulars. He started the project in 2012, but the roots of winemaking on these vineyard sites go back to 1405, when his ancestors worked the land and made wine.
The farm is large, 120 hectares, but only 34 of the land is dedicated to vineyards. Ignasi’s family also grows olives, almendro trees and vegetables. Much of the land is also still forested. It stretches across the villages of Pacs del Penedès, Sant Cugat, Sesgarrigues, Mediona and Sant Quintí de Mediona. This area is considered the heart of Cava production in Penedes.
The entire farm is certified as organic. Focus is on local Penedes varieties that make the local specialty Cava: Macabeo, Xarel.lo, Parelleda. In recent years they have also added other traditional Catalonian varieties: Garnacha Blanca, Sumoll and Malvasia de Sitges.
Ignasi makes his wine from his family’s best and oldest vineyards. He makes wine with the purpose of best expressing the unique terroirs of the individual sites. Ignasi prefers to produce varietal wines, whenever possible, for the same reason, his philosophy of one vine = one wine for a clearer snapshot of the place.
The majority of the vines were planted between 1960-1970, and the soils haven’t been 2011. This allows for the highest concentration of fruit in the aroma and palate. The low production of the estate allows for full maturation with high acidities even in varieties infamous for low acidity such as Macabeao and Parellada.
The completion of the cellar in 2015 has allowed for total independence. Before that wines were made at Mas Candi. Previous vintages have been vinified by Ignasi in the spirit of the Mas Candi cellar: restless and free, a celebration of free will. As always, Ignasi’s wines have been made traditionally, and naturally. This means no or very low sulfites. Production is very limited.
