Mauro is focused on balance and acidity. Not that he shies away from power, but he deeply believes in Romagnan Sangiovese, and he also deeply believes that it is not Tuscan Sangiovese, and for him Romagnan Sangiovese is defined by ‘equilibrato’.

“Sangiovese here [in Romagna] is elegant. It has freshness and acidity. It can stand by itself [not needing Bordelaise varietals] and it can age.”
