Mauro Giardini is one of the great ambassadors of the Romagnan table. He loves food. He loves wine. He loves Romagna. He is committed to making the most authentic, highest quality wines in the region. So far, based on Slow Wine and the Gambero Rosso, he has achieved that status. Mauro is focused on balance and acidity. Not that he shies away from power, but he deeply believes in Romagnan Sangiovese, and he also deeply believes that it is not Tuscan Sangiovese, and for him Romagnan Sangiovese is defined by ‘equilibrato’.

“Sangiovese here [in Romagna] is elegant. It has freshness and acidity. It can stand by itself [not needing Bordelaise varietals] and it can age.”
