THIS WINE’S STORY

Vincent doesn’t consider his Ancestral Method as a “pet nat.”

After harvesting the grapes, fermentation starts in stainless steel and Vincent controls the temperature. At a certain point of the fermentation in tank, the juice is lightly filtered and Vincent adds a bit of yeasts and bottles the wine with a kind of “beer caps.” Then, the fermentation in bottle continues thanks to the added yeasts. Once the wine is ready with more or less of sugar, the bottles are disgorged and corked.
