Talented wine makers, close friends and Pet Nat lovers Alwin & Stefanie Jurtschitsch and Martin & Anna Arndorfer, set out to collaborate on a Pet Nat only project.

The first bottle of Fuchs and Hase came in 2012, but after Alwin traveling in Austrialia, and Martin traveling in New York, they developed a much wider range of tasting experiences and a deeper understanding of Pet Nat. Using this wider knowledge and stoked passion, they released their first “Volumes” from Weingut Fuchs and Hase from the 2015 vintage.

All the grapes for Fuchs and Hase are grown in Kamptal. It’s hard to complain about working in such a beautiful place.

There is a great diversity of soils and a tense climate to develop acidity perfect for Pet Nat. They source from colder places and vineyards that build more minerality, particularly from Langenlois and Strass. Their access to a diversity of great vineyards has been key to their success in the Pet Nat project.

Vineyards are farmed organic. In the cellar there are no additions, that means no sugar, no yeast, no sulphur. It is a pure expression of the grapes and the work of these artisans.

Every ferment starts from native yeast on the grape skins. This gives the finished wine a deeper extraction from the berries and structure and complexity.

Different volumes have different lengths of skin contact. During the first fermentation the wine is bottled and left to finish. This is the Méthode Ancestrale. After stabilization of tartarics during the cold of winter wines are disgorged and topped with wine from the same volume.
